Saganaki   Baked prawns (shrimp)
Ingredients: 
100g green prawns 2 cups classic tomato sauce 
1 tablespoon tomato paste (contains no sugar or oil) 
1 garlic clove 
1 spring onion (optional) Pinch of oregano 
 2 drops stevia 
                                                         1 tablespoon prawn stock, salt and pepper   
Method: Peel, trim and chop the garlic and spring onion. Place into a small cast iron pan; add prawn stock and sauté for two minutes. Pour the tomato sauce into pan; add the tomato paste, oregano and stevia drops, stir. Simmer for approximately 10 minutes. Meanwhile, peel the prawns leaving the tails intact, remove the heads, and devein; thoroughly wash. Arrange the prawns into the pan, and place in a preheated oven at 180oC. Cover and cook for 12 minutes or until prawns turn pink in colour. Remove from the oven, season and garnish with a few sprigs of parsley and lemon wedge. Serve at the table with a Greek style salad, topped with an added salad of fennel and onion.   

Cooking with a cast iron pan, serving straight from the oven to the table gives a rustic feel to any meal. A normal fry pan is acceptable; however, place the tomato sauce and prawns into an earthen ware dish for baking.
